Dr. Apostolidis teaches course in food science and biochemistry. His research interest is focused on the determination of the in vitro biochemical mechanism of action of plant, seaweed and fish by-products derived metabolites for type 2 diabetes and related hypertension and oxidation management.

Dr. Bell teaches organic chemistry.  He has been a senior scientist and project manager in the pharmaceutical industry.  He has experience with the day to day operations of a chemical pilot plant experience and has personally  working with some of the ‘small-scale’ 200 gallons glass line reactors. His current interest is in the area of using Manganese (III) porphyrins to break down cellulosic lignin.
