Dr. Emmanouil Apostolidis

Dr. Apostolidis teaches course in food science and bio-chemistry. His research interest is focused on the determination of the in vitro biochemical mechanism of action of plant, seaweed and fish by-products derived metabolites for type 2 diabetes and related hypertension and oxidation management.

Dwayne Bell

Dr. Dwayne Bell
B.S.  California Polytechnic State University, San Luis Obispo
Ph.D. University of Texas at Austin

Dr. Bell teaches organic chemistry. He has been a senior scientist and project manager in the pharmaceutical industry. He has experience with the day to day operations of a chemical pilot plant experience and has personally working with some of the ‘small-scale’ 200 gallons glass line reactors. His current interest is in the area of using Manganese (III) porphyrins to break down cellulosic lignin.

Matthew Davenport

Dr. Matthew Davenport
B.A. Greenville College, Greenville IL.
Ph.D University of Florida.

Dr. Davenport teaches Introduction to Food Science, Food Processing and Engineering, and Food Chemistry. His research interests focuses on the chemistry of food proteins specifically the structure / function relationship of proteins during gelation, seafood byproduct utilization, residual animal protein.
