FSU Cooks: Culinary Nutrition Workshops

Spring 2019 Workshops

FSU Cooks is in the kitchen cooking up some heart healthy recipes for our culinary nutrition workshops.  These fun hands-on workshops are led by Food and Nutrition Department faculty and are designed for cooks of all levels.  Each workshop features healthy tips and hands on culinary learning experiences.  This Spring the workshops will feature many heart healthy foods.

  • All workshops take place on Fridays from 5:00 – 7:00 pm at Framingham State University unless noted.
  • Cost per person per workshop is $5 for students and $10 non-students. A sliding scale is available.
  • Registration is required and space is limited.
  • All recipes include common cooking and baking ingredients that may or may not be specified in the class description including various fruits, vegetables, nuts and legumes, meats, fish and shellfish, dairy products, eggs, wheat flours, and herbs and spices.

Fish IconNothing Fishy About Fish! – February 22nd

FSU Cooks is cooking up some fun with fish in our kitchen.  Fish is a nutritional gift from the sea, but knowing which fish are sustainable sourced and are best for your health and budget can be fishy indeed!  Swim on over to our kitchen to learn some tips for selecting and preparing healthy brain boosting fish varieties that won’t leave you fishing for answers.  Put your knowledge to work and cook up a variety of simple and delicious recipes, celebrate your culinary accomplishments, and eat your creations.

In this fun hands-on workshop you will:

  • Discuss why fish is such an important part of a sound mind in a sound body (OMG – it’s the Omega 3’s)
  • Examine the difference between eating fatty fish and taking supplements
  • Identify what sustainable fish practices means and what to look for to identify sustainable fish in the grocery store
  • Review tips for making safe and tasty fish selections that won’t drain your wallet
  • Observe a variety of cooking techniques that will make delicious and nutritious your new fish vocabulary
  • Prepare a variety of seafood recipes that will have everyone swimming towards the dinner table
  • Eat your creations!

Recipes will include:  

  • Steamed Mussels with White Wine and Garlic Sauce
  • Fish Tacos with Broccoli Slaw and Homemade Corn Tortillas
  • Baked Salmon with Citrus and Herbed Quinoa
  • Lemon Pudding Cakes

Shaker IconShake the Shaker! Reduce Sodium and Added Sugar - March 8th

FSU Cooks is hard at work looking for heart healthy ways to help you shake the salt and added sugar shaker!  There are many salty ways that that sodium and added sugar can sneak into our food.  While salt and sugar are definitely flavor boosters, a little can go a long way.  Join us in our kitchen to learn some tips for selecting and preparing lower sodium and sugar recipes.  Put your knowledge to work and cook up a variety of simple and delicious recipes, celebrate your cooking accomplishments, and eat your culinary creations.

In this fun hands-on workshop you will:

  • Discuss small changes you can make to choose foods with less sodium and sugar
  • Compare food labels and look for ways to reduce sodium and added sugar intake
  • Identify spices, herbs, or salt-free seasonings that will give you new ways to eat healthfully
  • Prepare a variety of recipes featuring heart healthy recipes that will have your family cheering for more
  • Eat your creations!

Recipes will include:

  • Lower Sodium Dumplings
  • Chicken “Zoodle” Lo Mein
  • Broccoli Beef Stir-Fry
  • Confetti Fried Rice
  • Orange Slices with Citrus Syrup

Food Cart IconHeart Health in the Aisles! Grocery Store Tour - April 12th 

FSU Cooks is on the road!  Grocery shopping can be a chore so join FSU Cooks on a special grocery store tour as we help you learn how to navigate the aisles to select heart healthy and tasty foods.  The tour will be led by Karen White a registered dietitian and FSU faculty member. This tour will meet at the Stop & Shop on Temple Street in Framingham.  Additional information about the meeting location will be sent one week before the event.

In this fun hands-on store tour you will:

  • Discuss how a grocery store layout can affect buying choices
  • Examine food labels and identify ways to look for and select heart healthy options
  • Identify simple and affordable alternatives to processed foods
  • Get tips on easy ways to prepare your veggies!
  • Learn how to shop healthy on a budget!  

Heart IconBeans and Legumes They’re Good for Your Heart! - May 17th

FSU Cooks is in the kitchen cooking up heart healthy ways to incorporate beans and legumes into your meals.  These nutritional powerhouses are delicious, inexpensive and relatively easy to prepare.  Join us in our kitchen to learn some tips for incorporating beans and legumes into recipes.  Put your knowledge to work and cook up a variety of simple and nutritious bean and legume recipes sure to please the family, toot your own horn, and eat your culinary creations.

In this fun hands-on workshop you will:

  • Discuss the role beans and legumes have in a heart healthy menu plan
  • Identify a variety of beans and legumes and compare the difference between dried and canned
  • Review tips for incorporating and eating more beans and legumes into meals
  • Prepare a variety of recipes featuring beans and legumes that will please the whole family
  • Eat your creations!

Recipes will include:

  • Hummus with Oven Baked Sweet Potato Chips
  • A Possible Burger
  • Homemade Low Sodium Ketchup
  • Bean Salad
  • Brownies (with a secret ingredient)
